Zabaglione With Fresh Berries Recipe

Ingredients
  • 5 1/4 c blackberries or blueberries or quartered strawberries (berries can be mixed if desired) .
  • 5 large egg yolks .
  • 1/3 c sugar .
  • 1/3 c dry marsala or sweet marsala wine

Directions
  • Step #1 Combine the egg yolks, sugar, & Marsala in a bowl.
  • Step #2 Whip together, using a hand-held balloon whisk, until thoroughly mixed.
  • Step #3 Place the bowl over a pot of simmering water & heat, whisking constantly, until the mixture is thick, foamy & has reached 165 degrees F.
  • Step #4 Cool slightly & serve as soon as possible or transfer the zabaglione to a container.
  • Step #5 Cover up with plastic wrap placed directly on the surface to prevent a skin from forming.
  • Step #6 Zabaglione may be served warm or at about room temp.
  • Step #7 Serving Size: 1/2 c zabaglione with 2/3 c berries.
