Barley Burger Main Course Soup Recipe

Ingredients
  • 1 large onion, sliced .
  • 1 (16 oz) bag frozen mixed vegetables .
  • 1 tbsp worcestershire sauce .
  • 1 tbsp brown sugar .
  • 1/2 lb mushrooms, sliced .
  • 2 tbsps oil .
  • 1 tbsp vinegar .
  • 1 (28 oz) can crushed tomatoes or sliced tomatoes with juice .
  • 4 c water .
  • 3 garlic cloves, minced .
  • 2 (10 1/2 oz) cans beef consomme .
  • 1 lb ground beef or beef sirloin, cut in cubes .
  • 1 c quick-cooking barley .
  • salt & pepper

Directions
  • Step #1 Heat oil in a kettle.
  • Step #2 Saute onion until they are translucent, stir in the garlic & mushrooms & cook 1 min.
  • Step #3 Meanwhile brown hamburger or beef cubes.
  • Step #4 Drain.
  • Step #5 Add beef to onion mixture.
  • Step #6 Stir in tomatoes & their juice, brown sugar, barley, the consomme & 4 Cups of water, vinegar, worcestershire sauce, pepper & mixed vegetables.
  • Step #7 Bring to a boil, reduce heat cover & let simmer 10 mins.
