1/2 c fine Italian seasoned breadcrumbs (you may have some extra left over, depending on the size of your scallops.) .
2 tbsps lemon zest .
FOR THE COATING .
1/8 tsp ground cayenne pepper (optional) .
1/2 tsp fresh ground black pepper .
1/2 tsp kosher salt .
FOR THE GARNISH .
20 large sea scallops (about 1 1/4 lbs) .
1/3 c freshly grated parmesan cheese (Use the good stuff)
Directions
Step #1 COATING.
Step #2 Combine the coating ingredients on a plate & mix with your fingers.
Step #3 Wash scallops & remove the small, tough side muscle.
Step #4 Pat the scallops dry with paper towels & place this in a small bowl.
Step #5 (Be sure the scallops are very dry or it will make the breading soagy).
Step #6 Add the olive oil & mix to coat.
Step #7 Dip the scallops in the coating, turning to cover evenly.
Step #8 Gently press the crumbs onto the scallops.
Step #9 Place the scallops in a single layer on a clean plate.
Step #10 Cover up with plastic wrap & put in the fridge for 30 mins to set the crumbs.
Step #11 GARNISH:.
Step #12 Finely chop the parsley & lemon zest & mix together.
Step #13 Add the olive oil & lemon juice.
Step #14 Spray a grill tray generously with olive oil.
Step #15 Place the scallops on the grill tray 1-2 inches apart & grill over direct medium heat until just opaque in the center, about 8 mins, turning once halfway through grilling time.
Step #16 Treat them carefully when turning.
Step #17 Remove from the grill, place a little of the garnish onto each scallop & serve warm.
