Chicken Enchiladas Recipe

Ingredients
  • 2 tbsps milk .
  • 1/2 tsp cumin .
  • 2 c cooked chicken or cooked turkey, sliced .
  • 7 oz sliced green chilies .
  • 12 (14 oz) cans green enchilada sauce .
  • 1/2 tsp salt .
  • 4 oz shredded cheddar cheese or monterey jack cheese .
  • 8 corn tortillas .
  • 4 oz light cream cheese, softened

Directions
  • Step #1 Heat oven to 350°F.
  • Step #2 Mix cream cheese, milk, cumin & salt until smooth.
  • Step #3 Mix in chilies & chicken or turkey.
  • Step #4 Put two corn tortillas between sheets of paper towel.
  • Step #5 Microwave 30 seconds to soften.
  • Step #6 Place 1/8 of chicken mixture on each tortilla.
  • Step #7 Roll up & place this in greased casserole dish.
  • Step #8 Repeat with remaining tortillas.
  • Step #9 Pour sauce over enchiladas.
  • Step #10 Cover up pan with foil wrap & heat for 20 mins.
  • Step #11 Remove foil wrap & sprinkle with cheese.
  • Step #12 Heat 5 mins or until cheese melts.
