Cheesecake - Lemon Recipe

Ingredients
  • 3 (8 oz) packages cream cheese, softened .
  • 3 whole large eggs (or 4 large eggs) .
  • 1 c granulated sugar .
  • Garnish .
  • julienned candied lime peel (optional) .
  • 5 tbsps butter, melted .
  • 1 1/4 c graham cracker crumbs .
  • 1 tbsp granulated sugar .
  • 1/4 c lime juice .
  • sweetened whipped cream .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat oven to 350 degrees (175 C.
  • Step #2 ).
  • Step #3 Combine crumbs, butter & 1 tbsp (15 ml) sugar in a bowl.
  • Step #4 Stir well to coat all crumbs.
  • Step #5 Press the crumbs onto the bottom of an 8" springform pan.
  • Step #6 Bake crust for 5 mins & set aside.
  • Step #7 In large deep mixing bowl mix cream cheese, 1 c (225 ml) sugar & the vanilla; beat until smooth.
  • Step #8 Add key lime juice & beaten eggs & continue to beat until smooth & creamy.
  • Step #9 Pour filling onto baked crust.
  • Step #10 Bake for 60 to 70 mins.
  • Step #11 If top turns light brown, it's done.
  • Step #12 Remove from the oven & cut cake loose where it is attached to sides of pan & cool until it reaches room temperature.
  • Step #13 Place in the fridgerator to chill in the fridge.
  • Step #14 When chilled, remove the springform pan sides & cut.
  • Step #15 Serve with sweetened whipped cream & the lime strips is used.
