Green And Yellow Beans With Goat Cheese Crumble Recipe

Ingredients
  • 125 ml crumbled goat cheese .
  • 2 ml lemon peel, grated .
  • 1 red onion, sliced .
  • 125 ml chicken broth .
  • 5 ml Dijon mustard .
  • 30 ml vegetable oil .
  • 10 ml dried oregano .
  • 10 ml minced garlic cloves .
  • salt & pepper .
  • 30 ml lemon juice .
  • 60 ml olive oil .
  • 600 g frozen green beans or frozen yellow beans .
  • 1 red pepper, sliced

Directions
  • Step #1 Heat vegatable oil in large non stick skillet or wok.
  • Step #2 Add frozen beans.
  • Step #3 Pour on chicken broth & mix.
  • Step #4 Cover up & cook at medium-high heat for 5 to 7 mins or untill desired tenderness.
  • Step #5 Transfer beans to a large bowl & set aside.
  • Step #6 Stir fry onions & peppers for 5 mins.
  • Step #7 Add to beans & toss.
  • Step #8 In a separate bowl whisk together olive oil,oregano, lemon juice & peel, garlic & mustard.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Pour over beans & toss to coat.
  • Step #11 Just before serving sprinkle with crumbled goat cheese.
