Delicious Roasted Glazed Fall Vegetables Recipe

Ingredients
  • GLAZE .
  • 1/2 c molasses .
  • salt .
  • 2 acorn squash, peeled, seeded & cut into large cubed pieces .
  • 1/2 c butter, melted .
  • 1 tsp vanilla (optional) .
  • 5 medium sweet potatoes, peeled & cut into about 1-inch pieces .
  • 1 lb carrots, sliced into large pieces .
  • pepper (optional) .
  • 1 tsp cinnamon .
  • 3 russet potatoes, peeled & cut into about 1-inch cubes .
  • 1 c brown sugar .
  • 1/2 c water

Directions
  • Step #1 Set oven to 400F degrees.
  • Step #2 Butter a large casserole dish (I use my 13x9-inch) white Corning Ware dish that has higher sides, it is the perfect size for this recipe.
  • Step #3 In a bowl, mix/whisk all glaze ingredients together until thoroughly mixd.
  • Step #4 Toss the veggies between the two buttered baking pans.
  • Step #5 Spice up veggies with salt (and pepper if desired).
  • Step #6 Drizzle the glaze over veggies.
  • Step #7 Toss with a spoon to coat the veggies all over.
  • Step #8 Cover up & bake for about 30 mins.
  • Step #9 Uncover & stir the veggies with a spoon, then place back in oven to bake another 15-20 mins more, or until veggies are desired tenderness.
  • Step #10 *NOTE* it is best not to overbake the veggies, as they will be mushy, try to bake only until fork-tender.
