Soft Ginger Cookies Recipe

Ingredients
  • 1 egg .
  • 2 tsps ground ginger .
  • 1/4 c molasses .
  • 1 c white sugar .
  • 2 1/4 c flour .
  • 3/4 c butter, at about room temp .
  • 1/4 tsp cloves .
  • 1 tsp baking soda .
  • 3/4 tsp cinnamon .
  • 1/4 c sugar .
  • 1/4 tsp salt

Directions
  • Step #1 Combine flour, cinnamon, soda, ginger, cloves & salt.
  • Step #2 Set aside.
  • Step #3 Beat butter 30 seconds, until soft.
  • Step #4 Add sugar & beat until fluffy.
  • Step #5 Add egg & molasses & beat well.
  • Step #6 Add 1/2 the flour mixture & stir in the, then stir in the the rest of the flour mixture.
  • Step #7 The dough should be at a consistency that you can roll it with your hands into balls.
  • Step #8 I often have to add quite a bit more flour.
  • Step #9 Roll into 1 inch balls, then roll the balls in sugar.
  • Step #10 Place cookes 2 inches apart on ungreased cookie sheet & bake this at 350 degrees for 8-11 mins.
  • Step #11 Do not brown! The cookies should be almost underbaked in the middle.
  • Step #12 Let, cool 2 mins & transfer to a cooling rack.
  • Step #13 Store in cookie tins.
