Corny Mexican Salad Recipe

Ingredients
  • 1 medium tomato, sliced
  • Tortilla chips
  • 2 (15 oz) cans black beans, rinsed & drained
  • 1/2 tsp hot pepper sauce
  • 1/2 c vegetable oil
  • 1 medium ripe avocado, peeled & cubed
  • 1/4 c red wine vinegar
  • 1/2 tsp salt
  • 1/2 c sliced onion
  • 1 (11 oz) can Mexicorn, drained

Directions
  • Step #1 In a bowl, mix the beans, corn, tomato, avocado & onion.
  • Step #2 In a small bowl, whisk the oil, vinegar, salt & hot pepper sauce; pour over bean mixture & toss to coat.
  • Step #3 Serve with tortilla chips if desired.
