Salmon With Rice-florentine Recipe

Ingredients
  • 1/2 c short-grain rice, cooked .
  • 1 tbsp butter, melted .
  • 2 salmon fillets, about 1/4-inch thick .
  • 1/4 c fresh romano cheese or parmesan cheese, shredded .
  • 1 tsp garlic powder .
  • 1 egg, beaten .
  • 1/3 c cream cheese (softened) or plain yogurt .
  • 1/4 c frozen spinach, thawed, squeezed dry & finely sliced .
  • 1 tbsp butter, divided .
  • 1/2 tsp Tabasco sauce (optional) or red pepper flakes (optional)

Directions
  • Step #1 In mixing bowl, mix rice, cream cheese, garlic, Tabasco- if using -butter, spinach, cheese, & egg.
  • Step #2 Blend thoroughly.
  • Step #3 Add a little mayo, if needed to make a creamy, but stiff mixture.
  • Step #4 (Needs to hold together well.
  • Step #5 ) Dry fillets.
  • Step #6 Place enough mixture on fillets, to ½” thick-- spreading evenly.
  • Step #7 CAREFUL NOT TO OVERFILL.
  • Step #8 Starting with short side, roll up tightly.
  • Step #9 Place in dish with seam side down; put in the fridge about 2 hrs to set filling.
  • Step #10 When ready to bake, preheat your trusty oven to 400F dgrees F.
  • Step #11 Remove salmon rolls to cutting board.
  • Step #12 With a very sharp knife, cut each roll in half to form rolls about 2” thick.
  • Step #13 Place all 4 rolls in lightly sprayed baking dish; cover with foil wrap & bake for about 25 mins until salmon flakes.
  • Step #14 Remove foil wrap; dot tops with butter & place under broiler until light golden.
  • Step #15 Serve hot.
