Warm Apple And Cinnamon Cake Recipe

Ingredients
  • 150 g caster sugar .
  • 25 g butter, melted .
  • 1 large egg .
  • 225 g self raising flour .
  • 1 tsp baking powder .
  • 1 tsp ground cinnamon .
  • 1/2 grated lemon, zest of .
  • 25 g sliced pecans (optional) .
  • For the topping .
  • 2 large bramley cooking apples (500g or 1 lb 2 oz) .
  • 150 ml milk .
  • 1/2 lemon, juice of .
  • 75 g butter, at about room temp .
  • 50 g granulated sugar

Directions
  • Step #1 Generously butter & line a 12 X 8 X 1 inch baking tin.
  • Step #2 Preheat oven to 180*C/350*F.
  • Step #3 Peel, core & thinly slice the apples & toss in the lemon juice.
  • Step #4 Set aside.
  • Step #5 Sift the flour & baking powder into a bowl.
  • Step #6 Add the butter pieces & rub in until the mixture resembles fine crumbs.
  • Step #7 Stir in the caster sugar & the grated lemon zest.
  • Step #8 Combine the egg & milk, mixing with a fork to break up the egg.
  • Step #9 Add to the dry ingredients, stirring with a wooden spoon to mix, then beat for 1 min to get a soft cake batter.
  • Step #10 Turn the mixture into the prepared tin & spread evenly over the base.
  • Step #11 Brush the cake batter with the melted butter.
  • Step #12 Top with the apple slices in neat overlapping rows to cover all the batter.
  • Step #13 Scatter with the pecans, if using.
  • Step #14 Mix the granulated sugar & cinnamona nd sprikle evenly over the whole surface.
  • Step #15 Bake for 40 mins.
  • Step #16 REmove from the oven & allow this to cool for 10 to 15 mins.
  • Step #17 Cut into squares & serve warm with ice cream.
