Chocolate Refrigerator Cake Recipe

Ingredients
  • 300F g dark chocolate .
  • 2 tbsps golden syrup .
  • 1 c brandy or Cointreau liqueur .
  • 125 g walnut pieces .
  • 185 g unsalted butter, melted .
  • 60 g slivered almonds .
  • 60 g glace cherries .
  • 250 g raisins, soaked in .
  • butter, to grease cake tin .
  • 250 g digestive biscuits

Directions
  • Step #1 Grease round 20cm cake tin with butter.
  • Step #2 Put biscuits between sheets of greaseproof paper & crush with rolling pin.
  • Step #3 In a bowl mix together biscuit crumbs, nuts, cherries & raisins & liqueur.
  • Step #4 In a small saucepan over low heat/flame add syrup, 150g chocolate & melted butter.
  • Step #5 Stir until all mixed together & melted.
  • Step #6 Pour this mixture over the biscuit mixture & stir well.
  • Step #7 Pack mixture into cake tin.
  • Step #8 Cover up & put in the fridge for several hrs.
  • Step #9 Then melt the remaining chocolate & pour over cold cake whilst in tin.
  • Step #10 Allow chocolate to set in fridge & then serve in small slithers.
