Chicken Vegetable Soup Recipe

Ingredients
  • 2/3 c water .
  • salt & pepper (optional) .
  • 3 green onions, sliced .
  • 2 tbsps sliced fresh parsley .
  • 1 1/2 c sliced tomatoes .
  • 1 (49 1/2 oz) can chicken broth .
  • 1 c sliced mushrooms .
  • 1 stalk celery, sliced .
  • 3/4 lb boneless skinless chicken breasts, & cut into cubes .
  • 4 medium potatoes, cubed .
  • 1 tsp dried thyme .
  • 1 large carrot, sliced

Directions
  • Step #1 In a soup pot, mix broth & water & bring to a boil.
  • Step #2 Add potatoes, reduce heat to medium-low & cook, covered, for 8 mins.
  • Step #3 Add chicken, carrot & celery; continue to cook for 10 mins more.
  • Step #4 Add remaining ingredients, except salt & pepper.
  • Step #5 Reduce heat, cover & let simmer 5 mins or until vegetables are tender & chicken is cooked thoroughly.
  • Step #6 Spice up with salt & pepper, if desired.
