Sweet Potato Pie Ice Cream Recipe

Ingredients
  • 1 1/2 c cooked mashed sweet potatoes, cooled .
  • 1/2 tsp pumpkin pie spice .
  • 3 tbsps brown sugar .
  • cooking spray .
  • 1/2 (15 oz) package put in the fridged pie dough .
  • 4 c low-fat vanilla ice cream

Directions
  • Step #1 Place a large bowl in freezer.
  • Step #2 Let ice cream stand at about room temp 45 mins or until softened.
  • Step #3 Preheat oven to 450°.
  • Step #4 Cut pie dough round in half.
  • Step #5 Place half of dough on a baking sheet coated with cooking spray; reserve remaining dough for another use.
  • Step #6 Bake dough at 450° for 10 mins or until lightly browned.
  • Step #7 Cool completely on a wire rack.
  • Step #8 Break crust into small pieces.
  • Step #9 Place sweet potatoes, sugar, & spice in a bowl.
  • Step #10 Mash with a fork until well mixed.
  • Step #11 With a rubber spatula or stand mixer, piecrust pieces, mix sweet potato mixture, & softened ice cream in chilled bowl.
  • Step #12 Cover up & freeze to desired consistency.
