Ingredients
2 egg whites, beaten .
1 c raw walnuts (not cooked or salted, available at Asian markets) .
1 c mayonnaise .
1 lb chicken breasts, cut into small strips .
1 c water chestnut starch (or use cornstarch) .
1/2 tsp salt .
1/3 c honey .
1/2 c reduced-fat milk (do not substitute) .
1/4 c sweetened condensed milk .
corn oil (for frying)
Directions
Step #1 1) Put chicken strips in medium bowl, then add beaten egg whites & salt.
Step #2 Mix to coat chicken, then set aside for 10 mins.
Step #3 2) After 10 mins, toss chicken pieces in water chestnut starch.
Step #4 Dust off excess starch.
Step #5 Set aside.
Step #6 3) Rinse walnuts in water, then toss in honey & mix well.
Step #7 4) Using wok or deep skillet, add enough oil so that you will be able to deep-fry first the nuts & then the chicken.
Step #8 Heat oil to 350 degrees.
Step #9 5) Add walnuts to oil & fry until they turn golden brown, stirring regularly.
Step #10 This will take just 1 to 2 mins.
Step #11 6) Remove walnuts from oil & drain on paper towels.
Step #12 7) To hot oil add chicken.
Step #13 Cook, until chicken is cooked through, turning every once in awhile, about 3 mins.
Step #14 8 ) In medium saucepan, mix mayonnaise, sweetened condensed milk & 2% milk.
Step #15 Cook over low heat/flame, stirring constantly.
Step #16 Sauce is done when it starts to bubble.
Step #17 9) Put chicken in large bowl.
Step #18 Pour hot sauce over chicken pieces & mix well.
Step #19 10) To serve: Divide chicken pieces among 4 serving plates.
Step #20 Top each serving with walnuts.
Step #21 Garnish with vegetables if desired.
Step #22 Makes 4 servings.
