South African Milk Tart (melktert) Recipe

Ingredients
  • 1 tsp almond extract .
  • 2 c milk .
  • 2 tsps cinnamon .
  • Custard .
  • 5 eggs .
  • 2 1/2 c unbleached white flour, plus extra for rolling .
  • Topping .
  • 2 tsps baking powder .
  • 1/4 c unbleached white flour .
  • 1 tsp vanilla extract .
  • 1/4 tsp salt .
  • 1 c butter .
  • 1/2 c sugar .
  • 1/2 c brown sugar .
  • 1/4 tsp salt .
  • 1 c sour cream .
  • Crust

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 For the crust, baking powder, mix the flour, & salt In a large-ish bowl.
  • Step #3 Cut in the butter with a pastry cutter or knife until the flour resembles a coarse cornmeal.
  • Step #4 Stir in the sour cream to form a soft dough.
  • Step #5 Dust the dough with flour & form it into a ball.
  • Step #6 On a generously floured surface, roll out the dough to fix at 11*13 baking sheet or a 14-inch pizza pan.
  • Step #7 It will be thicker than a usual pie crust.
  • Step #8 Carefully lift the dough & lay it out flat on the unoiled pan.
  • Step #9 Crimp the edges by pinching them to form a rim.
  • Step #10 Pierce the dough with a fork in several places.
  • Step #11 Bake for 25-30 mins utnil crisp & golden.
  • Step #12 Meanwhile, make the custard by heating the milk to boiling.
  • Step #13 Combine the sugar, eggs, flour, & salt in a mixer.
  • Step #14 When the milk begins o foam, pur it slowly into the whirling mixer.
  • Step #15 Pour the custard back into the saucepan.
  • Step #16 Cook over med-heat/flame, stirring constantly for 3-5 mins, until thickened.
  • Step #17 Remove from the heat, & stir in the the vanilla & almond extracts.
  • Step #18 Set aside.
  • Step #19 When the crust has baked, spread the custard filling evenly over it.
  • Step #20 Generously sprinkle the top this with cinnamon & brown sugar.
  • Step #21 Return the tart to the oven for about 15 mins, until the brown sugar melts & the top of the custard is firm.
  • Step #22 Serve the milk tart warm or cold.
