4 Points - Crispy Chipotle Potato Skins Recipe

Ingredients
  • 4 large potatoes, baking-variety, cooked & quartered (es) .
  • 1 1/2 tbsps olive oil .
  • 6 slices cooked Canadian bacon, finely sliced .
  • 1 tsp chili powder or dried chipotle powder .
  • 3/4 c nonfat sour cream .
  • 2 medium tomatoes, sliced .
  • 3/4 c shredded cheddar cheese, fat free .
  • 3 medium scallions, finely sliced .
  • 1/4 tsp hot pepper sauce

Directions
  • Step #1 Preheat oven to 425°F Scoop out flesh of potatoes, leaving about an 1/8th of potato flesh in potato.
  • Step #2 (Note: Reserve remaining potato flesh for another use such as mashed potatoes.
  • Step #3 ).
  • Step #4 In a small bowl, mix oil, chili powder & hot pepper sauce.
  • Step #5 Using a pastry brush, brush the inside of the potato wedges with the oil mixture.
  • Step #6 Place potato wedges in a single layer on a large nonstick baking sheet; sprinkle with bacon & cheese.
  • Step #7 Bake until cheese melts & potatoes are heated through, about 15 mins.
  • Step #8 Sprinkle top with tomatoes & scallions; serve this with sour cream on the side.
  • Step #9 Yields 2 potato skins & about 1 1/2 tbsps of sour cream per serving.
