Vegetable Lasagna Recipe

Ingredients
  • 15 oz ricotta cheese .
  • 10 3/4 oz condensed cream of chicken soup .
  • 1 c shredded mozzarella cheese, divided .
  • 10 oz frozen peas .
  • 16 oz frozen broccoli carrots cauliflower mix .
  • 6 uncooked lasagna noodles .
  • 4 oz cream cheese, softened

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Coat a 13x9 glass baking dish with non fat cooking spray.
  • Step #3 In a large bowl mix the soup, ricotta cheese & cream cheese.
  • Step #4 Mix well until smooth.
  • Step #5 Mix in the frozen vegetables.
  • Step #6 Mixture will be stiff.
  • Step #7 Spread 1/3 of the vegetable mixture on the bottom of the dish.
  • Step #8 Press 3 of the lasagna noodles over the vegetable mixture.
  • Step #9 Spread 1/3 of the vegetable mixture over the lasagna noodles.
  • Step #10 Sprinkle top with 1/2 c shredded cheese.
  • Step #11 Top with the remaining 3 lasagna noodles.
  • Step #12 Cover up with the remaining vegetable mixture.
  • Step #13 Cover up pan tightly with aluminum foil wrap.
  • Step #14 (I pour about 1/2 c water around the edges of the pasta before I seal the pan with aluminum foil wrap).
  • Step #15 Bake for 1 hr & 20 mins.
  • Step #16 Remove the aluminum foil wrap.
  • Step #17 Sprinkle top the top this with the remaining shredded mozzarella cheese.
  • Step #18 Return the dish to the oven for 5 mins or until the cheese melts.
