Mussels In Lemon Cream Recipe

Ingredients
  • 4 shallots, minced .
  • 3/4 c dry white wine .
  • 1 lemon, zested & cut into slices .
  • 4 lbs mussels .
  • 4 garlic cloves, minced .
  • Garnish .
  • sliced parsley .
  • 6 tbsps lemon juice .
  • 1 c heavy whipping cream .
  • 1/4 c parsley, sliced .
  • 6 tbsps butter .
  • 3 tomatoes, seeded & sliced small

Directions
  • Step #1 In a bowl stir this together butter, shallot, garlic, 4 tbsp lemon juice,1 tbsp parsley, & salt & pepper to taste.
  • Step #2 In a dutch oven pan melt herb butter over moderate heat.
  • Step #3 Saute until veggies are tender.
  • Step #4 Add mussels to pot & stir for 1 min.
  • Step #5 Add wine, lemon peel, 3/4 c cream, salt & pepper to taste.
  • Step #6 Stir well.
  • Step #7 Then lay lemon slices & tomato on top.
  • Step #8 Cover up & simmer, until mussels are opened, about 8-10 mins.
  • Step #9 Remove Mussels to serving dish.
  • Step #10 Discard any unopened mussels.
  • Step #11 In pot with mussel juices,increase heat to high & bring to boil.
  • Step #12 Boil down for 5 mins or reduced by 1/3.
  • Step #13 Add remaining cream, 2 tbsp lemon juice & parsley.
  • Step #14 Boil one min.
  • Step #15 Pour juice over top of mussels in serving dish.
  • Step #16 Serve mussels as soon as possible.
