Grandma's Creamed Tuna And Eggs On Biscuits Recipe

Ingredients
  • 1 tsp salt .
  • 1 (3 oz) package cream cheese (optional) .
  • 1 1/2 c milk .
  • 1/2 c frozen baby peas .
  • 6 oz albacore tuna or chunk tuna .
  • 8-12 biscuits .
  • 3 tbsps flour .
  • 1 tsp black pepper, course grind .
  • 3 tbsps butter .
  • 3 hard-boiled eggs, sliced .
  • 3 oz sliced pimentos

Directions
  • Step #1 Prepare biscuits & have them baking in oven.
  • Step #2 In a deep sauce pan melt the butter & whisk in flour to make a roux.
  • Step #3 When your butter/flour mixture has cooked for a few mins begin to add the milk slowly, whisking frequently to ensure a smooth white sauce.
  • Step #4 Add salt & pepper.
  • Step #5 Bring to an "almost" boil, while continuing to whisk.
  • Step #6 Once you reach this point turn your heat back down to low.
  • Step #7 (You might have to take pan off of the burner for a min or two if you are using electric so as not to scald white sauce).
  • Step #8 Add tuna, peas, & pimentos & lightly stir this to mix ingredients throughout the sauce.
  • Step #9 **Here is where you would add your cream cheese (cut into small cubes) to your sauce if you are using it.
  • Step #10 Cook on low to medium low heat until heated thorougly, stirring every once in awhile.
  • Step #11 Just before biscuits are done slice your hard boiled eggs & add to your creamed tuna.
  • Step #12 Give the sauce one last stir & then serve over hot biscuits.
