1 tbsp fresh coriander, sliced, to garnish (cilantro) .
3 tbsps honey .
4 tbsps unsalted butter .
salt, to taste
Directions
Step #1 With your mortal & pestal (or with a mallet, etc) crush your coriander seeds.
Step #2 Place the carrots & the crushed coriander seeds in a heavy saucepan along with 3 Tbsp butter, honey & salt to taste.
Step #3 Just barely cover the carrots with water, bring to a boil, & then cover & let simmer until carrots are tender.
Step #4 Remove lid & bring to a boil again, reducing the liquid to the consistency of syrup, shaking pan every once in awhile so your carrots do not stick to the pan.
Step #5 Once syrup consistency is formed, add in the remaining tbsp of butter & shake around to thoroughly glaze carrots.
Step #6 Transfer to your serving dish & garnish with fresh coriander.
