Redfish With Shrimp Topping And Mexican Blend Cheese Over Rice Recipe

Ingredients
  • 1/4-1 c all-purpose flour .
  • 1/4-1/2 c olive oil .
  • lemon pepper seasoning, to taste .
  • 2-3 key limes, juiced .
  • 3-4 garlic cloves, minced .
  • paul prudhomme's magic sodium-free seasoning, to taste .
  • 1 poblano peppers, minced .
  • Mexican mix cheese .
  • 1-5 lb redfish fillets .
  • 18-20 medium shrimp, peeled, tails removed .
  • shrimp topping for fish .
  • 3-4 tbsps olive oil .
  • 1 large onion, sliced .
  • del monte sliced tomatoes .
  • i like these two spices for this dish however you might also use your favorite creole seasoning

Directions
  • Step #1 Directions for the "Shrimp Topping for Fish".
  • Step #2 Heat olive oil in a sauté pan over med-heat/flame.
  • Step #3 When the oil is just hot enough add the onions & sauté until translucent, about 10-15 mins.
  • Step #4 Stir every once in awhile to prevent scorching.
  • Step #5 Add the garlic & sauté another 1-2 mins.
  • Step #6 Add tomatoes, key lime juice, cilantro, & Poblano pepper (*or pepper of choice).
  • Step #7 Heat over med-heat/flame until bubbly, reduce to simmer.
  • Step #8 If you prefer to have less liquid then reduce without a lid.
  • Step #9 Sauce can simmer up to 20 mins with lid on while preparing fish fillets.
  • Step #10 When the fish is just about ready add shrimp & leave in just long enough to cook through.
  • Step #11 Leave on low with lid on if necessary.
  • Step #12 *Note-May use pepper of your choice depending on heat level desired.
  • Step #13 Directions for the 'Pan “Fried” Redfish"'.
  • Step #14 Spice up the fish with Lemon Pepper & Magic Spice uping.
  • Step #15 Put just enough olive oil in pan to coat the bottom of the sauté pan.
  • Step #16 Heat the oil.
  • Step #17 “Lightly” dust the fish with the flour.
  • Step #18 “Fry” the fillets until done.
  • Step #19 Put on serving platter until served.
  • Step #20 To serve: This dish is best served over rice.
  • Step #21 The long cooking type of Brown rice is best.
  • Step #22 Put rice on plate, top rice with fish fillets, & cover fish with the Shrimp Topping.
  • Step #23 Sprinkle top Mexican mix cheese on top.
  • Step #24 The heat from the Shrimp Topping should melt the cheese, but if not just put in microwave briefly.
  • Step #25 Top with cilantro.
  • Step #26 Serve.
  • Step #27 Excellent served with Peach or Blueberry Margaritas.
