Pesto Rice Peppers Recipe

Ingredients
  • 3 tbsps sliced rehydrated sun-dried tomatoes .
  • 2 c cooked rice .
  • 1/3 c freshly grated parmesan cheese .
  • 3 red sweet peppers or orange sweet bell pepper or yellow sweet peppers .
  • 1/4 c pesto sauce .
  • 3 tbsps freshly grated parmesan cheese .
  • Topping .
  • 3 tbsps toasted pine nuts or sliced almonds

Directions
  • Step #1 In large bowl, cheese, mix together rice, pesto, sun-dried tomatoes & pine nuts; set aside.
  • Step #2 Cut peppers in half through stems (retain stems); seed & core.
  • Step #3 Fill each pepper half with rice stuffing.
  • Step #4 Place, stuffing side up, in baking dish.
  • Step #5 Cover up with foil wrap; bake in 350°F (180°C) oven for 35 mins.
  • Step #6 Topping: Remove foil wrap.
  • Step #7 Sprinkle top cheese over peppers; bake uncovered, for about 5 mins longer or until cheese is golden.
