Ingredients
1 1/2 tsps ground cumin .
1 1/2 tsps sugar .
1 medium onion, cut into 8 wedges .
1/2 tsp salt .
1 tsp hot pepper sauce .
4 garlic cloves, minced .
1 1/2 c orange juice .
1/2 tsp pepper .
1/2 c lime juice .
3/4 tsp ground allspice .
2-2 1/2 lbs boneless pork loin roast .
1 medium green bell pepper, sliced
Directions
Step #1 For marinade, onion, cumin, mix bell pepper, orange juice, lime juice, garlic, hot pepper sauce & allspice in mixer or food processor/blender.
Step #2 Cover up & mix or process until smooth.
Step #3 Remove & put in the fridge 1 c to use for sauce later.
Step #4 Using long meat fork or skewer, pierce pork roast deeply all over.
Step #5 Place roast in a plastic ziplock bag.
Step #6 Pour unreserved marinade over roast; seal bag.
Step #7 Refrigerate for 6-12 hrs, turning bag every once in awhile.
Step #8 Heat oven to 325F degrees F.
Step #9 Remove roast from marinade, discard marinade.
Step #10 Sprinkle top roast with salt & black pepper.
Step #11 Place roast on rack in shallow roasting pan.
Step #12 Roast, uncovered, 45 mins to 1 hr.
Step #13 Remove from oven.
Step #14 Cover up with foil wrap; let this stand for 15 mins before slicing.
Step #15 Meanwhile, mix reserved 1 c marinade, sugar & 1/2 tsp salt in medium saucepan.
Step #16 Heat to boiling; reduce heat.
Step #17 Simmer, for 5-10 mins or until mixture thickens slightly, uncovered, stirring every once in awhile.
Step #18 Serve with pork.
