Low-fat Black And White Cookies Recipe

Ingredients
  • 1 c sugar .
  • 2 tbsps unsweetened cocoa (melted chocolate is also acceptable) .
  • 1/4 c butter, softened .
  • 1 1/2 c confectioners' sugar, divided .
  • 1 tsp lemon juice .
  • 1 1/2 tsps baking powder .
  • icing .
  • cookies .
  • 2/3 c unsweetened applesauce .
  • 1/2 tsp salt .
  • 3 tbsps milk or light cream, divided .
  • 1 tsp vanilla extract .
  • 1/4 tsp almond extract .
  • 2 large egg whites .
  • 1 1/2 c all-purpose flour .
  • 1/2 tsp vanilla extract

Directions
  • Step #1 COOKIE: Preheat oven to 375°F.
  • Step #2 Line a baking sheet with parchment paper.
  • Step #3 Set applesauce in a fine sieve to drain while you prepare the other ingredients.
  • Step #4 In a medium bowl, whisk together flour, baking powder & salt.
  • Step #5 In a large bowl, cream together butter & sugar until smooth, 1-2 mins.
  • Step #6 Beat in applesauce, vanilla & lemon juice.
  • Step #7 Add in egg whites & beat until well mixd.
  • Step #8 Stir in flour mixture until batter is smooth.
  • Step #9 Drop batter two tbspfuls at a time onto the prepared baking sheet.
  • Step #10 Smooth slightly to form nice, round circles.
  • Step #11 Bake for 10 mins, until set but not browned.
  • Step #12 Allow to cool for a few mins on the baking sheet, then remove to a wire rack to cool completely.
  • Step #13 ICING: When cookies are cool, prepare the icing.
  • Step #14 Sift 3/4 c confectioners sugar into two small bowls.
  • Step #15 Add 1 tbsp milk & the almond & vanilla extracts to one bowl & stir until smooth.
  • Step #16 Add cocoa & 2 tbsp milk to the other bowl & stir until smooth.
  • Step #17 Using a small knife & working over the bowls to catch drips, spread each icing over half of each cookie.
  • Step #18 Set on a rack until icing is set, then store cookies in an airtight container.
