Mushroom Crust Quiche Recipe

Ingredients
  • 2 tbsps butter .
  • 1/2 lb fresh mushrooms, coarsely sliced .
  • 3 slightly beaten eggs .
  • 1/2 c fine dry breadcrumbs .
  • 1 c cottage cheese .
  • 1 c shredded monterey jack cheese .
  • 1/2 c green onions .
  • 1/4 tsp salt

Directions
  • Step #1 Saute fresh mushrooms in butter until golden (about 10 mins.
  • Step #2 Add bread crumbs & stir.
  • Step #3 Pat into a 9" pie plate.
  • Step #4 Combine remaining ingredients & spoon into crust.
  • Step #5 Bake in preheated 350F oven for 45 mins.
  • Step #6 Cool 10 mins before slicing.
