Pollo Al Ajillo Recipe

Ingredients
  • 1/2 c water .
  • salt .
  • 1/2 c olive oil .
  • 1 lemon, juice of .
  • 2 1/2-3 lbs chickens, cut into 8 pieces .
  • 1 pinch saffron, crushed & diluted in very small amount of water .
  • 1 head garlic, minced

Directions
  • Step #1 Heat oil in large skillet.
  • Step #2 Add chicken pieces & cook over moderate heat until golden brown.
  • Step #3 Place chicken pieces in large, shallow casserole.
  • Step #4 Spice up with salt.
  • Step #5 Pour off all but 4 tbsps of oil in skillet.
  • Step #6 Saute garlic.
  • Step #7 Stir in water & bring to boil.
  • Step #8 Pour over chicken.
  • Step #9 Add lemon juice & saffron.
  • Step #10 Cook, covered, over low heat/flame about 15 mins or until meat is tender.
  • Step #11 Serve, spooning sauce over chicken.
