Southern-style Yorkshire Pudding
Ingredients
1 c all-purpose flour
2 eggs
1 c whole milk
1/2 tsp salt
3 tbsps beef or bacon drippings
Directions
Step #1 In a large bowl, mix together the flour, milk, eggs & salt.
Step #2 Using an electric mixer, beat 5 mins, until smooth.
Step #3 Cover & put in the fridge 1 hr.
Step #4 Preheat oven to 425F degrees F (220 degrees C).
Step #5 Coat a 9x13 inch baking pan with beef or bacon drippings.
Step #6 Preheat the pan 15 mins so the drippings are hot & sizzling.
Step #7 Remove the mixture from the refrigerator.
Step #8 Beat briefly, then scoop into the baking pan.
Step #9 Bake 20 mins.
Step #10 Lower oven temperature to 375 degrees F (190 degrees C).
Step #11 Without opening the oven, continue baking 15 mins.
Step #12 The mixture should be puffed & golden brown.
Step #13 Remove from oven & serve hot.
