Baked Seafood, Orzo, And Feta Cheese Casserole Recipe

Ingredients
  • 1/2 tsp dried oregano .
  • 1 (28 oz) can tomatoes, sliced, juice from can included .
  • 1 large yellow onion, sliced .
  • 3 garlic cloves, minced .
  • 4 oz feta cheese, crumbled .
  • 1/4 c dry white wine .
  • 3/4 lb large shrimp, peeled & deveined .
  • 1 tbsp vegetable oil .
  • fresh ground black pepper .
  • 1/2 c orzo pasta .
  • 3/4 tsp salt .
  • 1 tsp sugar .
  • 3 tbsps sliced fresh parsley .
  • 1 lb halibut, cut into bite-size pieces

Directions
  • Step #1 In a Dutch oven, heat the oil over med-heat/flame.
  • Step #2 Add in onion & garlic; stir/saute for about 5 mins or until tender.
  • Step #3 Add tomatoes, seasonings, wine, & orzo.
  • Step #4 Simmer, uncovered, for 10 mins.
  • Step #5 Fold in halibut & shrimp; bake, covered, in a 400° oven for 15 mins or until halibut is white & shrimp is pink.
  • Step #6 Stir in parsley & cheese; bake, uncovered, for about 10 mins or until bubbly.
