Vegetarian Shepherd's Pie Recipe

Ingredients
  • 3 tbsps butter .
  • 1/2 c walnuts, toasted & sliced .
  • 1/4 tsp thyme .
  • Tofu Layer .
  • 1-2 tbsp tamari soy sauce, to taste .
  • salt .
  • 3 tbsps tamari soy sauce .
  • 4 large potatoes, peeled & cubed .
  • 1/2 lb mushrooms, sliced .
  • Mushroom Gravy .
  • 1 pinch fresh ground black pepper .
  • 1/2 c milk .
  • 2 tbsps cornstarch, disolved in 1/2 c water .
  • Potato Layer .
  • 1 1/2 c hot potato water .
  • 1 pinch fresh ground black pepper .
  • 2 tbsps vegetable oil .
  • 1/2 tsp ground coriander .
  • 1 large onion, sliced .
  • 2 tbsps vegetable oil .
  • 1 cake tofu, frozen, thawed, & shredded .
  • 1/2 lemon, juice of (about 1 Tbsp)

Directions
  • Step #1 To freeze-thaw & shred tofu: Freezing tofu gives it a chewy texture which adds textural variety to casseroles.
  • Step #2 To perform this step, place the cake of tofu on a plate in the freezer, lightly covered with plastic wrap.
  • Step #3 In a couple hrs, the tofu will be solidly frozen.
  • Step #4 Thaw the tofu for about 24 hrs in the fridge.
  • Step #5 The thawed tofu block will resemble a sponge.
  • Step #6 Gently squeeze the water out.
  • Step #7 Then, grate the tofu by hand or in a food processor/blender.
  • Step #8 For the tofu layer, saute the sliced onions in the oil with the thyme, coriander, & black pepper until the onions are translucent.
  • Step #9 Stir in the sliced walnuts & shredded tofu.
  • Step #10 When heated through, stir in the lemon juice & soy sauce.
  • Step #11 Remove from heat.
  • Step #12 To make the mashed potatoes, place the cubed potatoes in a saucepan & cover with lightly salted water.
  • Step #13 Bring to a boil, & then simmer the potatoes until soft.
  • Step #14 Drain, saving the hot potato water to use in the gravy.
  • Step #15 Mash the potatoes with the butter & milk.
  • Step #16 Salt to taste.
  • Step #17 For the gravy, heat the oil in a skillet.
  • Step #18 Stir in the mushrooms, soy sauce, & black pepper.
  • Step #19 Saute, stirring every once in awhile, until the mushrooms are tender.
  • Step #20 Add 1 1/2 c of the potato water & bring to a boil.
  • Step #21 Slowly stir in the the cornstarch mixture & cook at a low boil, continuing to stir, until the gravy is clear & thick.
  • Step #22 Oil a 9 inch square casserole dish or use a 10 inch round cast iron skillet.
  • Step #23 Layer the tofu mixture, then the mushroom gravy, & then the mashed potatoes.
  • Step #24 Dot the top this with butter or margarine.
  • Step #25 Bake at 400°F for 15-20 mins until the top becomes golden.
