Chicken Orzo Salad Recipe

Ingredients
  • 1 1/2 c uncooked orzo pasta
  • 1 tsp grated orange zest
  • 1 1/2 tbsps vinegar
  • 1/3 c olive oil
  • 3/4 tsp salt
  • 1 cantaloupe, cut into bite-size pieces
  • 1 c red seedless grapes, halved
  • 1/4 c orange juice
  • 4 c sliced cooked chicken breast
  • 1 head lettuce leaves, for lining salad bowls
  • 1 c low-fat mayonnaise
  • 3/4 c cashew halves

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Add pasta, & cook for 8 to 10 mins or until al dente.
  • Step #3 Rinse with cold water, drain, & set aside.
  • Step #4 In a large bowl, salt, orange juice, vinegar, whisk together oil, & orange zest.
  • Step #5 Stir in cooked chicken until coated.
  • Step #6 Stir in cooked orzo, cantaloupe, grape halves, & mayonnaise.
  • Step #7 Cover & chill for 4 to 6 hrs.
  • Step #8 Just before serving, stir in the cashews.
  • Step #9 Serve in lettuce lined bowls.
