Scotch Broth Recipe

Ingredients
  • 6 c water .
  • 1 large carrot, peeled & cubed .
  • 1-2 celery rib, thickly sliced .
  • pepper .
  • 1/4 c parsley, sliced .
  • 2 leeks, white part only, cut into 1/2-inch pieces .
  • 1/3 c pearl barley .
  • salt .
  • 2 shoulder lamb chops

Directions
  • Step #1 In the slow cooker (aka crockpot), leeks, mix the lamb, barley, carrot, celery & water.
  • Step #2 Cover up & cook on low for 5 to 7 hrs, until meat is very tender & falling apart; add salt & pepper to taste.
  • Step #3 Ladle into serving dishes & garnish with parsley.
