Griddled Marinated Aubergine (eggplant) With Feta Recipe

Ingredients
  • 1 garlic clove, crushed .
  • 200 g feta cheese, crumbled .
  • 1/2 c olive oil .
  • 1/2 c parsley, sliced .
  • 2 large eggplants, cut lengthways into 2cm thick slices .
  • 1 lemon, juice of .
  • 1/2 c coriander, sliced

Directions
  • Step #1 Heat a frying pan until very hot.
  • Step #2 Brush the eggplant with a little oil & fry in batches until soft & cooked through.
  • Step #3 Arrange on a platter.
  • Step #4 Mix the lemon juice & garlic together with 5 tbsp of the olive oil & some salt & pepper, to taste.
  • Step #5 Drizzle over the eggplant.
  • Step #6 Let the dish sit for 5 mins, then scatter the cheese & herbs over & serve.
