Sautéed Carrots With Toasted Almonds Recipe

Ingredients
  • 1 tsp bland oil .
  • 1 dash salt .
  • 1/4 c slivered almonds, toasted .
  • 1 tbsp fresh garlic chives .
  • 1 1/2 tbsps butter .
  • 1 dash white pepper .
  • 1 lb fresh carrots, peeled, thinly sliced into matchsticks (the best quality carrots you can find) .
  • 1/4 c apple juice (or apple cider)

Directions
  • Step #1 In a large skillet heat the pan on medium heat.
  • Step #2 Add the butter & melt.
  • Step #3 Be careful not to burn the butter.
  • Step #4 Next add the oil.
  • Step #5 Saute the carrots, stirring frequently until they start to turn golden & are crisp-tender about 10-12 mins.
  • Step #6 Do not allow the skillet to turn dry- adding a little apple juice if necessary.
  • Step #7 When the carrots are crisp-tender add the remaining apple juice & saute mixture until liquid is absorbed.
  • Step #8 Finally, toasted almonds, stir in the the lemon juice, chives, salt & white pepper.
