Grilled Skirt Steak Vietnamese Style Recipe

Ingredients
  • 2 medium shallots, sliced or 2 large shallots, sliced .
  • 1 tbsp nam pla (Thai fish sauce) .
  • salt & pepper .
  • 1/2 c washed dried & sliced mint or Thai basil .
  • 1 tsp fresh coarse ground black pepper .
  • 1 1/2 lbs skirt steaks .
  • 2 tsps sliced garlic .
  • 12-16 leaves boston lettuce, washed & dried .
  • 1/2 c washed dried & sliced cilantro .
  • 2 tbsps fresh lime juice .
  • 1 small Thai chile, stemmed & seeded or 1/2 tsp crushed red pepper flakes .
  • 1 tsp sugar

Directions
  • Step #1 Start a charcoal or wood fire, or heat a gas grill.
  • Step #2 Fire should be moderately hot.
  • Step #3 Grill rack should be no more than 4 inches from heat source.
  • Step #4 Combine first 7 ingredients in a mixer or food processor/blender & purée; add herbs & pulse to chop finely, but not quite purée.
  • Step #5 Taste & adjust seasonings as you like.
  • Step #6 Sprinkle top steak with salt & pepper & grill 4 mins a side.
  • Step #7 Cut into 4 steaks, arrange over lettuce, & serve this with sauce.
  • Step #8 Or cut into strips, wrap each strip in a lettuce leaf, top this with a bit of sauce & roll up.
