Corn Dog Casserole Recipe

Ingredients
  • 2 c thinly sliced celery
  • 1 1/2 c milk
  • 2 (8.5 oz) packages dry corn bread mix
  • 1 1/2 lbs vegetarian hot dogs
  • 2 eggs, beaten
  • 1/4 tsp ground black pepper
  • 2 tsps rubbed sage
  • 2 tbsps butter
  • 2 c shredded Cheddar cheese, divided
  • 1 1/2 c sliced green onion

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Grease a shallow 3 quart baking dish.
  • Step #3 In a large skillet over med-heat/flame, melt butter, then saute celery for 5 mins.
  • Step #4 Stir in green onions, & saute an extra 5 mins.
  • Step #5 Place in a large bowl & set aside.
  • Step #6 Cut hot dogs lengthwise into quarters, then cut into thirds.
  • Step #7 In the same skillet, saute hot dogs for 5 mins, until lightly browned.
  • Step #8 Mix hot dogs into celery & onions.
  • Step #9 Set aside 1 c of this mixture.
  • Step #10 In a medium bowl, milk, pepper, mix eggs, sage, & corn bread mix.
  • Step #11 Stir well to mix, then stir in theto remaining hot dog mixture.
  • Step #12 Mix in 1 1/2 c cheese.
  • Step #13 Spread mixture into prepared baking dish.
  • Step #14 Top with reserved hot dog mixture & remaining 1/2 c cheese.
  • Step #15 Bake uncovered in preheated oven for 30 mins, until golden brown.
