Ingredients
  • 3 tbsps fresh basil, sliced (1 Tbsp dried) .
  • 2 c onions, sliced .
  • 1/3 c parmesan cheese, grated .
  • pastry dough, for one 9-inch pie .
  • 1 tbsp white flour .
  • 2 tbsps olive oil .
  • 3/4 c mozzarella cheese, grated (4 oz) .
  • 1/4 tsp salt .
  • 1/3 c black olives, sliced .
  • 4 eggs, lightly beaten .
  • 1 medium tomato, thinly sliced .
  • 1 c milk .
  • 1/4 tsp dry mustard .
  • 1 garlic clove, minced

Directions
  • Step #1 Roll out pastry dough & line a 9-inch pie pan with it.
  • Step #2 Saute the onions & garlic in olive oil until tender & lightly golden.
  • Step #3 Add the basil & salt.
  • Step #4 Preheat oven to 375°F.
  • Step #5 Thoroughly mix the eggs, milk, mustard & flour & set aside.
  • Step #6 Combine the 2 cheeses.
  • Step #7 Sprinkle top 1/2 the cheese into the pie shell.
  • Step #8 Spread the sauteed onions over the cheese.
  • Step #9 Scatter on the olives.
  • Step #10 Pour the egg-milk mixture into the pie.
  • Step #11 Cover up with remaining cheese & arrange the tomato slices on top.
  • Step #12 Bake 40-45 mins or until set.
