Chicken And Mushroom Lasagna Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 c mozzarella cheese, shredded .
  • 1 (16 oz) can crushed tomatoes .
  • 1 tsp basil .
  • 10 oz canned chicken broth .
  • 1 c ricotta cheese .
  • 3 tbsps butter .
  • 1/2 c half-and-half .
  • 1/2 lb fresh mushrooms, sliced .
  • 1/2 tsp salt .
  • 1/2 tsp pepper .
  • 3 tbsps flour .
  • 1/4-1/2 c parmesan cheese .
  • crushed red pepper flakes, to taste .
  • 2 tbsps butter .
  • 9 lasagna noodles .
  • 1 tsp oregano .
  • 2 c shredded cooked chicken, left-over roasted chicken is perfect

Directions
  • Step #1 Start a pot of water for boiling the noodles.
  • Step #2 Boil noodles according to package directions, drain, rinse with cool water to keep them from sticking together while preparing sauces.
  • Step #3 Melt butter in skillet.
  • Step #4 Saute' onions until transparent.
  • Step #5 Add mushrooms, basil, oregano, salt & pepper, crushed red pepper.
  • Step #6 Cook until mushrooms begin to give off their juice.
  • Step #7 Blend tomatoes in mixer or food processor/blender.
  • Step #8 Add to mushrooms.
  • Step #9 Stir in chicken.
  • Step #10 Keep warm over low heat/flame while making the cream sauce.
  • Step #11 Melt butter in saucepan.
  • Step #12 Stir in flour, cooking & stirring for 2 - 3 mins.
  • Step #13 Add broth, stirring until thickened.
  • Step #14 Stir in half-and-half over low heat/flame.
  • Step #15 Spoon small amount of cream sauce in the bottom of a lasagne pan.
  • Step #16 Place 3 cooked noodles in pan.
  • Step #17 Add 1/3 of meat mixture & 1/3 of cream sauce.
  • Step #18 Top with 1/3 of mozzarella & ricotta.
  • Step #19 Repeat layers 2 more times.
  • Step #20 Top with Parmesan.
  • Step #21 Bake at 350 degress for 20 - 25 mins or until nice & bubbly.
  • Step #22 Let stand at least 10 mins before cutting.
