Green Beans With Lemon Peel Recipe

Ingredients
  • 1 lemon .
  • 7 1/2-12 1/2 lbs green beans

Directions
  • Step #1 Wash & drain beens.
  • Step #2 Trim ends & break or cut beans into 1" pieces.
  • Step #3 Cut peel from lemon; remove white pith.
  • Step #4 Cut lemon into narrow strips.
  • Step #5 Boil beans 5 mins.
  • Step #6 Pack hot beans into hot jars, leaving 1" headspace.
  • Step #7 Add 1 or 2 pieces of lemon peel to each jar.
  • Step #8 Ladle boiling water over beans, leaving 1" headspace.
  • Step #9 Remove air bubbles.
  • Step #10 Adjust 2 piece caps.
  • Step #11 Process pints 20 mins, quarts 25 mins at 10 lbs pressure in a steam pressure canner.
