- 1/4 c powdered sugar .
- 2 c flour .
- 4 tbsps fresh lemon juice .
- 1 c sugar .
- 1/4 tsp salt .
- 1 tbsp freshly grated lemon zest .
- 2 tbsps flour .
- 1 c butter, softened
Directions
- Step #1 Preheat oven to 350°.
- Step #2 To make the crust, cream the butter & powdered sugar.
- Step #3 Add 2 c flour to make a dough.
- Step #4 Pat out in a 9 x 9" square pan.
- Step #5 Bake for 15 mintues or until golden.
- Step #6 Mix the eggs, salt, granulated sugar, lemon juice & rind & remaining 2 tbls flour & baking powder.
- Step #7 Pour over the crust & bake for 20-25 mins.
- Step #8 When cool, dust with powdered sugar.
- Step #9 Cut into small squares.
- Step #10 Serve.
