Chewy Chocolate-coconut Macaroons Recipe

Ingredients
  • 1 (14 oz) can fat-free sweetened condensed milk .
  • 1/8 tsp salt .
  • 2 tbsps unsweetened cocoa .
  • 1 tsp vanilla extract .
  • 2 oz unsweetened chocolate, sliced .
  • 2 1/2 c sweetened flaked coconut, lightly packed .
  • 1/2 c cake flour, sifted

Directions
  • Step #1 Preheat oven to 250º.
  • Step #2 Line a large baking sheet with parchment paper.
  • Step #3 Place unsweetened chocolate in a small microwave-safe bowl; microwave at high for 1 min or until almost melted.
  • Step #4 Remove from microwave; stir until chocolate is completely melted.
  • Step #5 Combine flour, & salt In a large-ish bowl; add coconut, cocoa, & toss well.
  • Step #6 Stir in melted chocolate, vanilla extract, & sweetened condensed milk (the mixture will be stiff).
  • Step #7 Drop by level tbsps 2 inches apart onto prepared baking sheet.
  • Step #8 Bake for 45 mins or until edges of cookies are firm & center of cookies are soft, rotating baking sheet once during baking time.
  • Step #9 Remove from oven, & cool 10 mins on pan.
  • Step #10 Remove the cookies from the pan & cool completely on rack.
  • Step #11 Store in an airtight container.
