Apple Souffle Recipe

Ingredients
  • 2 tbsps canola oil (or other unflavored oil) .
  • 1 lemon, juice of .
  • 1 tsp cinnamon .
  • 6 eggs, separated .
  • 6 apples, cored, peeled .
  • 1 pinch kosher salt .
  • 1 tbsp potato starch .
  • 2 tbsps sugar

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Thinly slice apples & cover the slices with lemon juice, sugar & cinnamon.
  • Step #3 Beat yolks till creamy & thick.
  • Step #4 Add potato starch & salt & beat well.
  • Step #5 Add apple slices & mix to coat slices.
  • Step #6 In a separate bowl, beat egg whites till they stand in peaks.
  • Step #7 Fold whites into apple mixture.
  • Step #8 Coat casserole dish with the oil & place casserole in oven to warm the dish.
  • Step #9 After a few mins, pour the apple mixture into the warm dish & bake about 35 mins until custard is set.
  • Step #10 Serve as soon as possible.
  • Step #11 Note: This can be made in a traditional souffle dish, in a deep quiche pan, or in separate ramekins.
  • Step #12 If ramekins are used, they should be baked in a water bath & checked for doneness after about twenty to twenty five mins.
