Banana Nut Buttermilk All Bran Cereal Muffins Recipe

Ingredients
  • 1 1/2 tsps vanilla .
  • 1/2 c brown sugar, packed .
  • 1/2 tsp baking soda .
  • 1 egg .
  • 1/2 tsp salt .
  • 1/2 c oil .
  • 1/2 c walnuts .
  • 1 c all-bran cereal .
  • 1/2 c white sugar .
  • 1 1/2 c flour .
  • 1 c hot buttermilk .
  • 3/4 c raisins (optional) .
  • 2 1/2 tsps baking powder .
  • 3/4 c pureed bananas

Directions
  • Step #1 Set oven to 375 degrees.
  • Step #2 Set the oven rack to second lowest position.
  • Step #3 Spray 12 muffin c with non-stick cooking spray, & line with paper liners.
  • Step #4 Set the muffin trays on a baking sheet (the baking sheet is optional).
  • Step #5 In a medium bowl stir the HOT buttermilk together with the All Bran cereal, & let this stand for about 6 mins.
  • Step #6 Meanwhile puree the banana.
  • Step #7 After the 6 mins, transfer the bran mixture to a large bowl, & add in the pureed banana; mix to mix.
  • Step #8 Mix the two sugars together, then add to the bran/banana mixture with the egg, vanilla & oil; mix well to mix.
  • Step #9 Mix together the flour, salt, baking soda & baking powder; add to the banana mixture; mix carefully to make a soft batter.
  • Step #10 Fold in nuts & raisins (if using).
  • Step #11 With an ice cream scoop, divide the batter evenly between the muffin c.
  • Step #12 Bake about 22-28 mins or until muffins test done.
  • Step #13 *NOTE* Although it is not necessary, I like to place the muffin tins on a baking sheet to bake in the oven.
