Celery Vichyssoise Recipe

Ingredients
  • 1 bunch celery .
  • 3 c chicken broth or vegetable broth .
  • 1 tbsp butter .
  • 2 potatoes .
  • 1 tbsp flour .
  • 1 c milk .
  • 1 onion .
  • fresh ground pepper

Directions
  • Step #1 Saute 1 sliced onion in 1 T butter until softened, about 5 min.
  • Step #2 Stir in 1 T flour.
  • Step #3 Stir in chicken or Vegetable broth which ever you are using & fresh ground black pepper.
  • Step #4 Add 2 cubed peeled potatoes & 1 bunch sliced celery, about 6 c.
  • Step #5 Bring to a boil.
  • Step #6 Cover up & let simmer, from 20 - 25 mins.
  • Step #7 Puree in a food processor/blender or mixer.
  • Step #8 Reheat with 1 c milk.
  • Step #9 Serves 4 - 6.
