Habanero Gold Jelly Recipe

Ingredients
  • 3/4 c white vinegar .
  • 1/4 c finely sliced habanero peppers, with seeds or jalapenos, & scotch bonnet peppers mixd .
  • 3 c white sugar .
  • 1 (3 oz) envelope bernardin liquid pectin .
  • 1/3 c finely sliced dried apricots .
  • 1/4 c finely sliced red peppers .
  • 1/4 c finely sliced red onions

Directions
  • Step #1 Cut apricots into 1/8 inch slices & measure into large stainless steel saucepan with the vinegar; let this stand for four hrs.
  • Step #2 Cut onions & peppers into 1/8 inch slices; cut slices into a 1/4 inch dice.
  • Step #3 Add to apricots & stir in the sugar.
  • Step #4 Bring mixture to a full rolling boil.
  • Step #5 Stirring constantly, boil hard for one min.
  • Step #6 Remove from heat & as soon as possible stir in the liquid pectin, mixing well.
  • Step #7 Stir for about 3 mins to mix solids, but put into jars before it gets too firm.
  • Step #8 Pour into hot sterilized jars, dividing solids equally & fill to within 1/4 inch from top of jar.
  • Step #9 Apply snap lids & process in boiling water bath for 5 mins if you choose.
  • Step #10 Once sealed you can rotate or invert jars while still warm to distribute solids if needed.
