Seattle Mussels Mariniere Recipe

Ingredients
  • 4 1/2 lbs mussels, scrubbed .
  • 6 shallots, peeled & sliced .
  • 1 c heavy whipping cream .
  • 1/4 tsp red pepper flakes .
  • 3 garlic cloves, peeled & sliced .
  • 6 tbsps butter .
  • 2 tbsps lemon juice .
  • 2 tbsps olive oil .
  • 1 c white wine .
  • 1/4 c parsley, sliced

Directions
  • Step #1 In are large dutch oven, heat oil.
  • Step #2 Add 4 tbsp butter & melt.
  • Step #3 Add red pepper flakes, shallots & garlic.
  • Step #4 Sautee until tender & starting to become golden.
  • Step #5 Add lemon juice, wine, cream & parsley.
  • Step #6 Stir well to mix.
  • Step #7 Add mussels & stir again.
  • Step #8 Cover up dutch oven, & let simmer for 8 mins.
  • Step #9 Uncover dutch oven & remove mussels to bowls & keep warm.
  • Step #10 Turn heat to high, & let simmer down liquid in dutch oven until reduced by half.
  • Step #11 Stir in remaining butter.
  • Step #12 When butter is well mixd, pour broth over mussels.
  • Step #13 Serve as soon as possible.
