Pumpkin Cheesecake Bars Recipe

Ingredients
  • 1/2 tsp ground ginger .
  • 1 c canned pumpkin .
  • 1/4 tsp vanilla extract .
  • 4 eggs .
  • 2 egg yolks .
  • 2 c crushed windmill cookies (about 12 cookies) .
  • 1/2 tsp ground cloves .
  • 3 tbsps flour .
  • Topping .
  • 2 c whipping cream .
  • 1/2 c confectioners' sugar .
  • 1/4 tsp salt .
  • 1/4 tsp vanilla extract .
  • 1/2 c butter, melted .
  • 1/2 tsp ground cinnamon .
  • 1 1/4 c sugar .
  • 4 (8 oz) packages cream cheese, softened .
  • 1/2 tsp ground nutmeg .
  • 1/2 c sugar .
  • 1 c pecan halves .
  • 1/4 c whipping cream

Directions
  • Step #1 Combine cookie crumbs & butter; press into a greased 13 x 9 x 2 inch baking dish.
  • Step #2 Bake at 325F for 8-10 mins or until set.
  • Step #3 Cool on a wire rack.
  • Step #4 In large mixing bowl, beat cream cheese & sugar until smooth.
  • Step #5 Beat in the pumpkin, spices, flour, cream, salt & vanilla.
  • Step #6 Add the eggs & yolks; beat on lowish speed just until mixd.
  • Step #7 Pour over prepared crust.
  • Step #8 Bake at 325F for 35-40 mins or until center is almost set.
  • Step #9 Cool on a wire rack for 1 hr.
  • Step #10 Refrigerate for 3 hrs or until chilled.
  • Step #11 Sprinkle top sugar into a large nonstick skillet.
  • Step #12 Without stirring, heat over medium-low until sugar is melted.
  • Step #13 Stir in pecans.
  • Step #14 Transfer to a piece of greased foil wrap; cool.
  • Step #15 Break pecans into pieces.
  • Step #16 In a small mixing bowl, beat cream until it begins to thicken.
  • Step #17 Add confectioners sugar & vanilla; beat until stiff peaks form.
  • Step #18 Spread over chilled cheesecake.
  • Step #19 Sprinkle top with sugared pecans.
  • Step #20 Cut into bars.
  • Step #21 Refrigerate leftovers.
