Step #2 Add 1 1/2 c of the flour & the salt, mixing by hand until it is all incorporated & the mixture is smooth.
Step #3 Continue adding the flour, 1/4 c at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky.
Step #4 Turn the dough out onto a lightly floured surface & knead until smooth but still slightly tacky, 3 to 5 mins.
Step #5 Oil a large mixing bowl with the remaining 1 1/2 tsps olive oil.
Step #6 Place the dough in the bowl & turn to oil all sides.
Step #7 Cover up the bowl with plastic wrap & set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hrs.
Step #8 Pizza Time:
Remove the dough from the bowl.
Step #9 On a lightly floured surface, knead briefly.
Step #10 Let rest for 10 mins.
Step #11 Roll out into a rectangle, & cut into six squares, about 16 by 10 inches, about 5 inches each.
Step #12 Lightly brush each square with olive oil, leaving a 1/4-inch border.
Step #13 Bake until starting to turn light golden brown, about 6 mins.
Step #14 Evenly cover each square with goat cheese & return to the oven until the crust is golden brown & slightly crisp & the cheese is melted, 2 to 4 mins.
Step #15 Remove from the oven & let cool slightly.
Step #16 Cut each square in half diagonally.
Step #17 Arrange smoked salmon on each pieces & top this with a dollop of salmon roe.
Step #18 Sprinkle top with shallots, garnish with a small sprig of dill, & serve as soon as possible.
