Cindy's Meatloaf Recipe

Ingredients

1 tsp black pepper .
1 tbsp dried thyme .
1 green pepper, sliced .
1 c soft breadcrumbs .
1 c ketchup .
2 carrots, shredded .
3 tbsps olive oil .
3 tbsps brown sugar .
2 garlic cloves, smashed .
1 lb ground beef .
1 lb ground pork .
1 egg .
2 tsps salt .
1 large onion, sliced

Directions

Step #1 Preheat oven to 350 degrees.
Step #2 Saute vegetables & thyme in olive oil until soft, but not browned.
Step #3 Allow to cool somewhat.
Step #4 Mix veggies, salt & pepper, meats, 1/2 c of ketchup, egg & breadcrumbs carefully together.
Step #5 Form mixture into two loaf shapes on foil wrap lined baking sheet.
Step #6 Mix remaining ketchup & brown sugar.
Step #7 Spread ketchup mixture over loaves.
Step #8 Bake at 350 degrees for one hr & 15 mins.
Step #9 Allow to rest on baking sheet 10 mins before cutting.
