Step #1 Grease the bottom & up one inch, a deep dish, 9" pan.
Step #2 Evenly sprinkle on the breadcrumbs.
Step #3 Bake in 350 oven for 12 mins or until nicely browned.
Step #4 Remove from oven.
Step #5 While hot, sprinkle with 1/4 c Parmesan if desired.
Step #6 Set aside.
Step #7 In a large pan, sautee the onions in the butter until soft.
Step #8 Add the squash & red peppers.
Step #9 Add all the sesonings.
Step #10 Simmer til squash are just slightly tender.
Step #11 Remove from heat.
Step #12 In a separate bowl, with a fork beat the eggs with the flour then mix the cheeses & eggs mixing together well.
Step #13 Pour the egg-cheese mixture into the pan with the zucchini & carefully mix.
Step #14 Spoon the filling into the prepared pan, sprinkle with paprika if desired.
Step #15 Bake for 30 mins or until a test knife comes out clean.
Step #16 Remove from oven & let set for 15-20 mins before cutting.
